Negoska Carbonic is Chatzivaritis’ excellent interpretation of the Beaujolais style on Greek soil. Created using carbonic maceration, when the grapes are fermented whole and intact, then gently pressed, spontaneously fermented and aged on lees, this wine came out both fruity and floral, animated and laidback, light yet pleasantly tannic… and with a slight funky kick!
