Gastronomic and great with seafood and salad, ‘Santorini Natural’ doesn’t overshadow the dish, it co-operates with it. Made from the rare ‘Assyrtiko’ grape variety to which Gavalas is famous, this wine smells fresh and intense. The dusty mineral aroma collaborates wonderfully with the refreshingly elevated acidity and high citrus zest. This wine involves a process of long fermentation (two months) with native yeasts and then maturation for a further-six to-eight months. Only 4,000 bottles are produced at a time! So don’t wait around!
Five generations of wine production makes the Gavalas family winery one of the oldest in the region of Santorini. They concentrate on honoring the local and most vibrant varieties of grapes.
